When you farm in Essex County, NY (population 39,000) you need to be scrappy. Essex County is located about an hour or so south of the Canadian Border. Adam Hainer, owner of Juniper Hill Farm, believes that every potato is sacred, every potato is great, if a potato is wasted, God gets quite irate. For Adam, this is the meaning of life.
This brings us to the birth of the fingerling sweet potato. Technically a “fingerling potato” is a variety that naturally grows small and is fully mature when harvested. As such, there is no such thing as a “fingerling” sweet potato in our galaxy. There are, however, plenty of delicious “scraggily” sweet potatoes….a name only a farmer could love.
About a whopping 30% of commercial sweet potato crops are lost to culling, which for the most part means that they are too big or too small for sale to the grocery market. These are then often used for stock feed or canning.
