Cauliflower Rice with Spinach with Wine

Ingredients (serves 4 as a side dish)
1/4 cup white wine
1/4 cup vegetable or chicken broth
2 chopped garlic cloves
3 tablespoons of grated parmesan cheese
1 tablespoon butter or olive oil
6 ounces spinach
12 ounce container of cauliflower rice

Instructions
Simmer broth, wine, garlic, and butter or olive oil for 3 – 4 minutes. Add cauliflower rice and cook for 2 minutes then add spinach. Cover and simmer until spinach is wilted and liquid has evaporated. Toss occasionally. Remove from heat and sprinkle with parmesan cheese. Or try this wine-less recipe variation from Que Rica Vida.

 

Spanish Cauliflower Rice

Ingredients
12oz cauliflower rice
4 clove garlic, minced
1 medium Spanish onion, diced
2 medium tomato, diced
¼ cup Queen Olives (or other), chopped
3 tablespoons olive oil (or other)
¼ cup sherry -or- tomato juice -or- stock
Salt and black pepper to taste
Red pepper flakes to taste

Instructions
Heat a large sauté pan over high heat. Add olive oil, onions and garlic. Cook until onions become semi translucent (3min). Add salt, pepper and pepper flake, stir through. Add tomato and olive, cook 3minutes. Add Liquid (sherry or juice or stock) bring to boil. Add Cauliflower Rice, reduce heat to medium, cover and allow 5 minutes to cook. Serve with grilled or roasted vegetables, fish or chicken.

 

Cauliflower Rice with Coconut Milk

Ingredients
12oz cauliflower rice
1 medium Spanish onion, diced
1 bulb fennel, diced
2 tablespoons coconut oil
½ cup coconut milk (no sugar added)
Salt and pepper to taste

Instructions
Heat a large sauté pan over high heat. Add coconut oil, onion and fennel. Cook until onion becomes semi translucent (3min). Add salt and pepper, stir through. Add Cauliflower Rice, stir through. Add coconut, reduce heat to medium, cover and allow 5 minutes to cook. Serve with grilled fish or meat, roasted vegetables or any curry dish.
