We’re excited to introduce (or re-introduce) you to one of our favorite winter squash varieties: the Honeynut! Honeynut squash is basically a mini Butternut squash and, because of its smaller size, its sweet flavor is much more concentrated.
Honeynuts have been around for only about ten years, but they’ve got a really interesting story which you can read about here. Like many other winter squash varieties, Honeynuts can be stored for months at a time, though we always find ourselves enjoying them right away!
When roasted, Honeynut squash develops a rich, caramel-y flavor. Our recommendation? Dice the squash (you can even leave the skin on due to how thin it is), add a drizzle of oil and a sprinkle of salt, and throw in the oven at ~400 degrees to caramelize. Simple and deliciously sweet.
