We’re willing to say that beets are some of the most popular root veggies out there, and are pretty impressive when it comes to your health! These red beauties come packed with so many vitamins, nutrients, minerals, and even have some medicinal properties. Studies are showing that beets have the potential to help with brain function, inflammation, digestive health, and may even aid in athletic performance. Who knew?!

Not only are beets good for you, but they are so versatile and cook up great for any meal! Plus the beets this week are certified organic and grown by Juniper Hill Farm in Wadhams, NY. Roast, sauté, steam, and more… but try not to boil! Boiling actually sacrifices the quality and flavor of the beet.
